Mexican Style Chargrilled Chicken Rice

A classic chicken and rice dish with a Central American twist! This Mexican Style chicken and rice box is one for the flavour lovers out there.

Method

Step 1

Place 1 cup of rice into pan and add 1 teaspoon of tomato paste, ½ a teaspoon of ground cumin, ½ a teaspoon of chilli powder and finally add 2 cups of chicken stock. Bring to the boil then turn down to a low simmer with a lid on until the rice becomes fluffy.

Step 2

Cook the Sizzling Chicken Piri Piri Thigh using your preferred cooking method. Whilst the chicken is cooking, wash and slice the spring onions, chillies and coriander.

Step 3

Once cooked place the rice in a serving bowl and drizzle over garlic and herb soured cream. Next chop the chicken and layer over the top. Sprinkle over the spring onions, chillies, pomegranate seeds and coriander. Serve.

  • Sliced Coriander 3g
  • Pomegranate Seeds 15g
  • Garlic and Herb Soured Cream 15ml
